Why 80% Ethanol and not more?

80% percent of alcohol is ideal to the common 99.9% stronger solution. Pure alcohol coagulates protein in contact.

If 80 percent of alcohol is poured to a single celled organism (the germ or bacteria), the diluted alcohol also coagulates the protein, but at a slower rate, so that it penetrates all the way through the cell before coagulation can block it. If the alcohol percentage is above 80% then the alcohol evaporates too quickly to break down the cell organism.
